Dark Chocolate Berry Muffins

Ingredients

  • 500 mL (2 cups) all-purpose flour

  • 15 mL (1 tbsp.) baking powder

  • 1.25 mL (1/4 tsp.) salt

  • 125 mL (1/2 cup) canola oil

  • 180 mL (3/4 cup) sugar

  • 2 eggs

  • 125 mL (1/2 cup) 2% plain Greek yogurt

  • 80 mL (1/3 cup) 2% milk

  • 5 mL (1 tsp.) vanilla extract

  • 125 mL (1/2 cup) frozen wild blueberries

  • 125 mL (1/2 cup) diced strawberries

  • 125 mL (1/2 cup) raspberries

  • 125 mL (1/2 cup) dark chocolate pieces

 

Preparation

  1. Preheat oven to 205°C (400°F).
  2. In a bowl, combine flour, baking powder and salt.
  3. In another bowl, beat oil and sugar with electric mixer until mixture is pale. Add eggs, yogurt, milk and vanilla. Whisk again.
  4. Gradually add dry ingredients to moist ingredients and stir with wooden spoon until mixture is smooth. Add fruits and chocolate. Stir gently.
  5. Place paper baking cups in a twelve cup muffin pan. Divide the batter among the cups.
  6. Bake for 18 to 22 minutes, until a toothpick inserted in the center of a muffin comes out clean. Remove from oven and let cool on a rack.
